What is Chicken Noodle Soup?
Chicken noodle soup is a soup made from chicken, simmered in water, usually with other various ingredients. The classic chicken noodle soup consists of clear chicken broth often with pieces of chicken and vegetable. Some other additions that are added are pasta, noodles, dumplings, or grains of rice and barley. Chicken noodle soup can be a comfort food such as when it’s a rainy day, cold day, and when you are sick.

Ingredients
2 tablespoons unsalted butter
1 onion, diced
2 carrots, peeled and diced
2 ribs celery, diced
3 cloves garlic, minced
8 cups chicken stock
2 bay leaves
Kosher salt freshly ground black pepper, to taste
2 ½ pounds bone-in, skinless chicken breasts
2 ½ cups wide egg noodles
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh dill
1 tablespoon freshly squeezed lemon juice
In a large pot melt butter over medium heat.
Then add in onions, carrots, and celery.
Cook and stir occasionally until tender for 3-4 minutes.
Stir in garlic for 1 minute.
Add in chicken stock and bay leaves.
Season with black pepper and salt to taste.
Add chicken and bring to a boil.
Reduce heat and simmer for 30-40 minutes or until chicken is cooked through.
Remove chicken from the pot and allow it to cool.
After it is cooled, dice chicken into bite size pieces.
Stir in chicken and pasta and cook for about 6-7 minutes.
Remove from heat and stir in parsley, dill and lemon juice with salt and black pepper to taste.
Store in a airtight container in the fridge for up to 3-5 days
Freeze for up to 3-6 months
Microwave in a microwavable bowl for 2 minutes
Pour into a pot and heat on stove until warm
